Easy Raspberry Simple Syrup

Raspberry simple syrup brings all the tangy fresh raspberry flavour without any of the pesky little seeds! Add it to your favourite drinks to bring a natural raspberry taste and colour.

Frozen or fresh raspberries

You can use frozen raspberries or fresh if you’ve got some spare! I grow raspberries in the summer and autumn but just enough for snacking unfortunately, not syrup amounts so I always use frozen for this recipe. They’ll simmer in water, steeping in all their flavour and colour. There’s a lot of sugar added because that’s what makes this a simple syrup so it is super sweet, but a little lemon adds brightness. Use this syrup to flavour drinks like mocktails and cocktails.

Just a few ingredients

  • Raspberries – Fresh or frozen, or it’s a great way to use any mushier or bug damaged ones that you don’t want to eat fresh.
  • Sugar – Just plain white sugar so it doesn’t alter the taste of the raspberries.
  • Lemon or lime juice – brings out the flavour more

How to make it

  1. In a medium saucepan add all the ingredients and bring to a simmer for about 15 minutes.

  1. Turn off the heat and let the mixture cool completely. This extra steeping step brings out as much raspberry flavour as possible.

  1. Strain the mixture through a fine-mesh strainer. If you want a really clear liquid, don’t push down too much on the pulp.

Storing

Store it in a clean, sealed jar or container. This lasts around 2 weeks in the fridge. If you want to keep it longer, you can freeze it and a handy trick is to pour it into ice cube containers so it freezers in individual portion sizes! Ready to add to your next drink.

Ingredients
 
 

  • 240 g water
  • 200 g granulated sugar
  • 190 g raspberries fresh or frozen
  • 1/2 Tbsp lemon juice

Instructions
 

  • In a small saucepan over medium heat, combine the raspberries, sugar, water, and lemon juice. Bring the mixture to a simmer, stirring as the sugar dissolves.
  • Once the mixture starts simmering, lower the heat right down. Let it simmer for 10 minutes, stirring occasionally.
  • Balance a fine mesh strainer over the top of a bowl and tip in the raspberry mixture. Let it drain completely. Avoid pressing down on the raspberry pulp if you want a more clear liquid.
  • Let the syrup cool down to room temperature, then pour it into a clean glass jar or another airtight container.

Notes

Fresh fruit syrup like this can be stored in the refrigerator in a sealed container for up to 2 weeks. For long-term storage, the syrup can be frozen for up to 3 months.
