Air Fryer Banana Cake

This air fryer banana cake is quick and easy to put together and bakes up beautifully in the air fryer! It’s a small batch cake that uses up 1 ripe banana.

Baking cake in an air fryer

We had our oven break a little while ago and while waiting for the new one I baked and cooked everything in the air fryer. It cooks much faster than a regular oven, so I bake the cake at a lower temperature until baked through. This stops the top from browning too fast before the middle has had a chance to cook.

The top of an air fryer cake will always be a bit lumpier and interestingly shaped than in the oven, but it doesn’t hinder the flavour and it’s nothing a bit of icing can’t fix!

A few key ingredients

  • A ripe banana – A nice, large brown banana. The riper it is, the more natural sweetness it will bring (and the easier it is to mash.)
  • Greek yoghurt – This brings in some acidity and it makes a more tender cake texture.
  • Butter – salted or unsalted, this brings richness. I use salted butter, I think the extra salt balances the sweet.
  • A large egg – Perfect if you’re running low on eggs!

Method

  1. Grab your air fryer (I use a 5.3L one) and line a 6″ circle pan with parchment paper.

  1. Mix it well with melted butter, yoghurt, sugar and eggs, the fold through the dry ingredients.

  1. Pour the batter into the pan and place in the air fryer and bake until a toothpick inserted comes out clean.

  1. Let the cake cool completely before adding on frosting.

Tips

  • Use really ripe bananas They add natural sweetness and moisture.
  • Don’t overmix the batter so that the cake stays light and fluffy.
  • If your air fryer runs hot, check the cake a few minutes early.

Ingredients
 
 

Cake

  • 140 g ripe banana
  • 80 g Greek yoghurt room temperature
  • 55 g butter melted
  • 50 g soft brown sugar
  • 50 g granulated sugar
  • 30 g milk room temperature
  • 1 large egg room temperature
  • 1 teaspoon vanilla paste or extract
  • 125 g all-purpose flour
  • ¾ teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Small Batch Cream Cheese Frosting

  • 30 g butter softened
  • 55 g cream cheese full-fat ,softened
  • 120 g powdered sugar
  • 1/2 tsp vanilla paste or extract
  • Pinch of salt

Instructions
 

  • Mash bananas in a mixing bowl, then whisk in the yoghurt, butter, sugars, milk, egg and vanilla until smooth.
    140 g ripe banana, 80 g Greek yoghurt, 55 g butter, 50 g soft brown sugar, 50 g granulated sugar, 30 g milk, 1 large egg, 1 teaspoon vanilla paste
  • In a separate bowl, whisk together flour, baking powder, baking soda and salt.
    125 g all-purpose flour, ¾ teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt
  • Add the dry ingredients to the wet mixture, folding gently until just combined.
  • Pour batter into a greased and lined 6-inch cake pan.
  • Bake the cake in the air fryer at 320°F (160°C) for 25 minutes. Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If it's not clean, lower the heat to 300°F (150°C), bake the cake for another 5 minutes, and check again. Repeat this process until the toothpick comes out clean.
  • Let the cake cool before slicing. Serve plain or top with cream cheese frosting.

Frosting

  • Cream the butter until smooth, then add the cream cheese and beat again.
    30 g butter, 55 g cream cheese
  • Gradually add powdered sugar, then mix in vanilla and salt.
    120 g powdered sugar, 1/2 tsp vanilla paste, Pinch of salt
  • Spread over the cooled banana cake.

    I made a double batch and it took about an hour to bake all the way through. I was a bit anxious that the long cooking time will impact the flavor and moistness. It did neither. The cake is tasty and moist. I will definitely make this again.
