Sourdough Banana Muffins

These sourdough banana muffins are so moist and fluffy. They are a great way to use discard sourdough starter.

Mash bananas in a bowl.

Add eggs, melted butter, discard starter, vanilla and yogurt. Whisk together.

Stir flour, cinnamon, baking powder, baking soda and salt.

Fold into the wet ingredients.

The batter can be baked right away or fermented overnight.

Divide over muffin liners and add a slice of banana and a sprinkle of coarse sugar.

Bake until puffed and golden.
