New-York Style Sourdough Bagels

These New-York Style sourdough bagels are delicious and thick with an iconic chewy crust

The bagels are leavened with sourdough starter.

The bagel dough is a lean dough, made of bread flour, water, starter, a little sugar and salt.

It's nice and thick so it's easy to knead by hand!

The dough is made on day 1, then it has a cold-proof overnight and then they are shaped.

Once shaped, leave them to puff a bit, then poach in a honey hot water bath.

Coat in your favorite seeds, then bake until browned.
