How To Make Sourdough Baguettes

This recipe for step-by-step sourdough baguettes will show you how to make delicious french baguettes at home.

First, mix together sourdough starter, flour and water to create your levain. Let this rise until doubled in size.

Once it's almost doubled, mix together your main dough flour and water and let this autolyze for around an hour.

Add in your starter and salt and mix into a shaggy dough.

Perform 5 sets of stretch and folds over the next couple of hours to build strenght.

After this let the dough bulk ferement until bulked out by 50% (around 3-4 hours)

Divide into 4 equal pieces and shape into rounds. Let these rest for 30 minutes.

Shape the baguettes, lengthening them to about 12 inches.

Roll them, tapering off at the ends to give that traditional tip.

Place in floured towels  and refrigerate overnight.

Preheat the oven. Make 3-4 angled slashes in each baguette.

Bake until deep golden brown (alongside a little water or ice to create steam).
